Hokkaido Ramen Santouka Introduce
For California residents in the Bay Area, seeking the deeply satisfying flavors of authentic Japanese cuisine often leads to one name in San Jose: **Hokkaido Ramen Santouka**. Located conveniently inside the expansive **Mitsuwa Marketplace**, this acclaimed **Ramen restaurant** is a destination for lovers of high-quality, traditional Hokkaido-style ramen. Santouka’s reputation is built on its signature broth—a creamy, white Tonkotsu (pork bone) soup that is famously simmered for up to 20 hours to achieve a rich, aromatic, and gentle flavor that can be enjoyed down to the very last drop.
The culinary philosophy at Santouka is one of dedication to tradition. The broth is meticulously prepared using a unique method of roasting bones before boiling, a technique similar to French consommé, which results in a distinctively flavorful and fragrant base. The most famous version is the **Shio Ramen** (salt-flavored), which uses this silky Tonkotsu base and is described as having a sophisticated sea salt flavor. However, the menu caters to all preferences, featuring savory options like **Miso Ramen**, a light **Shoyu Ramen** (soy sauce base), and the robust **Spicy Miso Ramen** for those craving an extra kick.
What truly sets Santouka apart and makes it a must-try for **Tourists**, **College students**, and local **Groups** alike is the prized **Toroniku Ramen**. This is not just an ordinary bowl of noodles; it features the 'Tokusen Toroniku,' or special simmered pork cheek meat. This cut is incredibly precious—only 200–300 grams can be sourced from a single pig—and is celebrated for its incredibly rich flavor and melt-in-your-mouth, velvety texture, often compared to fatty tuna (Otoro).
While the atmosphere is **Casual** and **Trendy**, its location inside a marketplace gives it a self-service quality and means it’s not priced as a standard food court option. It remains incredibly **Popular for** both **Lunch** and **Dinner**, particularly on the weekends. Customers should note that there is **Usually a wait**, which is a testament to its popularity and the high demand for its authentic Japanese flavors in the heart of San Jose, California.

★ 5★ 4★ 3★ 2★ 1I ordered from here on uber eats. I ordered two ramens and only received one. The one I received was supposed to be a size large. We got a tiny container of the toppings with only one small piece of pork. There wasn’t a lot of broth and some of the broth spilled out. So we were left with a tiny bowl of soup with mostly noodles. Definitely not worth over $20 that I paid.
October 13 · Jacklyn HuttonIt’s a small ramen noodles place inside the Japanese supermarket.Very busy during the weekend and lunchtime but not much of other time!Self service kind please and not cheap as for food court prices. The ramen is just about average in quality and volume. Not bad but not great either. No need for a special trip but if you are near by, may not be a bad choice.
June 16 · Steven ChengAbsolutely incredible ramen. The two of us got a combo meal to share and it was the perfect amount of food. The broth was superb, as were the noodles. The rice side dish was great too. But the star was for sure the ramen.Expect a bit of a line, but it's worth the wait!
April 20 · Jake BymanThe small ramen shop always has a long line. There is a reason. The ramen is decent. They give a lot of char siu pork, more than most of the ramen shops. Recommend to order large. The medium is very small and is only one dollar cheaper. See my photo.
April 26 · yung-chin Chenpretty decent ramen inside of mitsuwa. we got the medium and it was actually a lot of food. broth was rich and noodles were good but i wish that there were a few more types of toppings on the ramen because it was quite meat heavy with large slabs of pork
